Rice-a-Roni Salad is a great side dish to go with dinner, or makes a great lunch all on its own. It’s also a terrific potluck dish. I love that I can make it ahead of time and just whip it out of the fridge at dinner time.
Mayo and Worcestershire sauce make a nippy dressing on this rice and chicken salad. It also has a great crunch from the water chestnuts, almonds, and celery. If you like chicken salad, you’ll love this recipe. So, so good.
1 package chicken flavored Rice-a-Roni
1 bunch green onions
1 (8 oz.) can water chestnuts
1 cup chopped celery
1/2 cup toasted slivered almonds
1 cup chopped chicken breast meat
1/2 cup mayo
1 dash Worcestershire sauce
salt and pepper to taste
Here’s what you do
Prepare the rice mix as directed on the package, then chill.
Toast the almonds a bit to brown them up and give them a little extra nutty flavor kick.
Chop up everything else in pretty small pieces.
To the cooked rice, add all the other ingredients. Mix well, chill, and serve.
Ooh, that’s a lot of crunchy scrumptious goodness.
