Easy Creamy Chicken

Tonight I made an easy creamy chicken dinner that was so simple and yummy I thought I’d better share the recipe.  It’s called Easy Creamy Chicken . . . so easy, and so creamy!  My favorite part though, was the zestiness of the little bit of lemon in it.

Ingredients

4 boneless skinless chicken breasts
1 package cream cheese (I used fat free)
1 can cream of chicken soup
1 carton sour cream
Rice (I used 1 1/2 cups uncooked rice to 3 cups water)

Here’s what you do

In a saucepan you combine 1 package cream cheese, 1 can cream of chicken soup, and 1 carton sour cream.  Stir it as it warms and combines.  It will turn into a really creamy sauce.

Put boneless skinless chicken breasts (I cut them into serving size chunks) in a 9 x 13 pan.

Pour the creamy mixture over it.

Sprinkle with plenty of lemon pepper seasoning.

Cover it with foil and bake it at 350 for 1 hour.  Serve over rice.

I like to serve it with a little slice of lemon on top.  I love citrus flavors, so I always squeeze just a bit of extra lemon on mine.  My kids like it better without the extra lemon, but the lemon slice lets you adjust how much or little you’d like.

You can also make Easy Creamy Chicken ahead of time.  Sometimes I whip it up at the same time I’m making dinner the previous day.  I just put the foil on and put it in the fridge the night before a busy day.  Then all I have to do for dinner is pop it in the oven, make some rice, and toss a green salad.

 The chicken is moist with the perfect amount of sauce.  The tangy hint of lemon made it taste so fresh.  Really yummy.  I had company last night and it was so easy to make ahead and then just pop in the oven an hour before dinner.  We had a spinach salad and homemade rolls too.  Dinner felt fancy, but was so simple.  And the chicken was just creamy goodness!  Hope you enjoy Easy Creamy Chicken as much as we do!
